
Shrimp & Avocado Salad

This recipe will be on repeat all summer long. Ready in 20 minutes, this colourful dinner salad features fresh shrimp and creamy avocado with baby spinach and crisp radish. Dressed in a crisp vinaigrette and finished with orange segments and nutty sesame.

Place sesame seeds in a large non-stick frying pan set over medium-high. Toast, stirring frequently, until golden, about 1 minutes. Transfer to a small bowl.

Add oil to pan, then shrimp. Cook, stirring frequently, until shrimp turn pink, about 3 minutes.

Arrange spinach on a serving platter. Top with avocado, orange, radishes and shrimp and sprinkle with sesame seeds. Drizzle with dressing and toss to coat before serving.
