Cranberry Orange Muffins Recipe
Position rack in centre of oven, then preheat to 400°F. Mist a 12-cup muffin pan with cooking spray or line with paper liners.
Stir together flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in cranberries.
Whisk together orange juice, oil, egg and orange zest in a medium bowl. Add to flour mixture and stir until just combined. Divide batter among muffin cups.
Bake until lightly browned and muffin tops spring back when lightly touched, 15 to 20 minutes. Garnish with orange slices, if desired.
