    Pulse tomatoes, red peppers, cucumber, jalapeno, garlic, oil, cumin and salt in a food processor until finely chopped.

    Add Grilled Ratatouille and vegetable juice and pulse two more times until combined. Stir in vodka, if using.

    Chill at least 2 hours before serving.
