Skillet Turkey Chili
Heat a 12-inch (30cm) non-stick frying pan over medium-high. Cook the onion and olive oil, stirring often, 6-8 minutes or until starting to brown. Push the onion over to one side of the pan.
In the empty side of the pan, cook the ground turkey for 8-10 minutes or until no pink remains; the pan will dry out and the meat will just start to brown. Use the back of a wooden spoon to break the turkey into smaller pieces as it cooks. Stir together the turkey and onions; add the chili seasoning and cook 1 minute longer.
Add the kidney beans, both cans of tomatoes and the corn. Reduce heat to medium-low. Simmer, stirring often, for 10-15 minutes or until thickened slightly.
