
Herbed Scalloped Potatoes

Sliced potatoes are baked with cream of leek soup and thyme until tender and golden for a side dish that no one will be able to resist. Bonus: These scalloped potatoes are lighter than your classic recipe, as they call for milk instead of thick cream.

Position rack in centre of oven, then preheat to 375°F. Spray a 2-L shallow baking dish with non-stick cooking spray.

Stir soup mix, milk, water and thyme in a medium bowl.

Arrange a layer of potatoes in prepared dish. Pour one-third of milk mixture over potatoes. Repeat layering twice more. Cover dish with foil.

Bake for 45 minutes. Uncover and bake until potatoes are tender and golden brown, about 15 more minutes.
