
Slow Cooker Lentil Stew Recipe

Another slow cooker stew to save the day (and your schedule). Set it and forget it for 8-10 hours on low. When ready to eat, stir in your kale and let it wilt, then serve.

Directions

Combine carrots, sweet potatoes, onion, garlic, lentils, tomato paste and cumin in a slow cooker insert. Stir in broth.

Cook until vegetables are tender, 8 to 10 hours on low, or 4 to 6 hours on high.

Add kale. Stir until wilted, about 2 to 3 minutes.
