Slow Cooker Lentil Stew Recipe
Tip: As an alternative to kale, try baby spinach, arugula or watercress.
Combine carrots, sweet potatoes, onion, garlic, lentils, tomato paste and cumin in a slow cooker insert. Stir in broth.
Cook until vegetables are tender, 8 to 10 hours on low, or 4 to 6 hours on high.
Add kale. Stir until wilted, about 2 to 3 minutes.
