Slow Cooker Pot Roast
Combine carrots and potatoes in a slow cooker.
Stir together onion soup mix and water in a small bowl. Set aside.
Heat a large frying pan over medium-high. Add oil, then roast. Sear roast on all sides until browned, 3 to 4 minutes per side. Transfer roast to slow cooker.
Reduce heat to medium. Pour onion soup mixture into same pan and scrape up any brown bits from bottom. Transfer contents of pan to slow cooker.
Cook until fork-tender, 8 to 10 hours on low, or 4 to 6 hours on high. Remove roast and vegetables to a serving platter and slice roast before serving.
