Smokey Bacon-Stuffed Jalapeños
Tip: You can make these stuffed peppers in the oven or on the grill — use what you have available to you.
Cut jalapeños in half lengthwise, then remove and discard seeds.
Heat a large frying pan over medium. Crumble in chorizo. Cook, stirring occasionally, until meat is no longer pink, about 7 to 8 minutes. Transfer chorizo to a paper towel-lined plate to drain fat.
Stir chorizo with cream cheese and barbecue sauce in a large bowl until combined.
Stuff each jalapeño half with cream cheese mixture. Sprinkle with bacon.
Preheat barbecue to medium-high.
Oil grill. Arrange peppers on grill. Barbecue until jalapeño peppers are tender, about 8 to 10 minutes. Sprinkle with chives, if desired.
