Southwestern Corn Chowder Recipe

In this Southwestern corn chowder recipe, potatoes, onion and corn are simmered in chicken stock before adding lime juice and cilantro for an extra bit of zing. This delectable chowder is ready in just 35 minutes.

    Heat a large saucepan over medium. Add margarine, then onion. Cook, stirring occasionally, until softened, about 5 minutes.

    Stir in concentrated stock until melted. Stir in water, scraping up any brown bits from bottom of saucepan, then potatoes and corn. Increase heat to high and bring to a boil.

    Reduce heat to low and simmer, stirring occasionally, until potatoes are tender, about 15 minutes. Lightly mash potatoes with a fork or potato masher until creamy.

    Stir in cilantro and lime juice before serving.
