Chicken Souvlaki & Lemon Orzo Recipe
Preheat barbecue to medium-high. Soak skewers in a dish of warm water for 20 minutes.
Meanwhile, combine chicken, 1 tbsp oil, 1 tbsp lemon juice, oregano, garlic, salt and black pepper in a medium bowl.
Thread chicken onto skewers. Oil grill. Barbecue skewers, flipping halfway, until an instant-read thermometer inserted into chicken reads 165°F, about 6 minutes. Set aside and cover to keep warm.
Combine water, milk and Alfredo pasta sauce in a medium saucepan set over medium-high. Bring to a boil. Add orzo. Return to a boil, then reduce heat to medium. Cook, stirring often and adding additional water in 1/4 cup increments if necessary, until orzo is tender, about 8 minutes.
Meanwhile, combine shaved vegetables, remaining 1 tbsp oil and 1 tbsp lemon juice in a medium bowl. Toss to coat.
Just before serving, stir lemon zest into cooked orzo. Serve chicken over orzo alongside shaved vegetable salad. Serve with lemon wedges, if desired.
