Spicy Chipotle Chicken Brown Rice & Quinoa
Heat 1 tbsp (15 mL) oil in a large nonstick skillet over medium-high heat, then cook your peppers and corn for 6 minutes. Remove from skillet and set aside.
In a medium bowl, toss chicken with flour.
Add the remaining oil to the skillet, then add chicken, cooking for 3 minutes or until browned. Chicken will continue to thoroughly cook with the brown rice and quinoa.
Add water and Knorr® One Skillet Meals, then bring to a boil. Cover and turn down the heat to medium-low. Simmer for 22 minutes or until rice is tender. For perfectly cooked brown rice and quinoa, make sure to keep covered.
Stir in peppers and corn. Remove from heat and let stand covered 2 minutes. Now dig in!
