Spicy Tomato Soup Recipe
Heat a 3-L pot over medium. Add oil and onion. Cook, stirring often, until onion is soft, about 5 minutes. Stir in sun-dried tomatoes, garlic and Cayenne pepper. Stir for 30 seconds.
Stir in tomatoes, water and bouillon cube. Bring to a boil, then reduce heat to medium-low. Cook, stirring occasionally, until mixture is slightly reduced, about 6 minutes. Purée soup using an immersion blender (or in blender in 2 batches). Serve garnished with chopped fresh basil and black pepper, if desired.
TIP: Serve soup with grilled cheese, if desired. To make grilled cheese, spread one slice of bread with mayonnaise. Place bread mayonnaise side-down in a hot frying pan. Add a cheddar cheese slice on top. Spread another slice of bread with mayonnaise and place mayonnaise side-up on top of cheese. Cook until lightly browned on one side. Flip over and cook until cheese is melted.
