Sweet Potato Dessert Squares Recipe

Sweet potatoes boast the best of both worlds: they're good for you, and they still taste great. In our sweet potato dessert squares recipe, we dress this healthful veggie up as a tasty snack! They're sure to be an instant family favourite.

    Position rack in centre of oven, then preheat to 375°F. Lightly spray a 9x13-in baking pan with oil.

    Combine oats and flour in a large bowl. Reserve 2/3 cup oat mixture in a small bowl. Add salt and Cayenne pepper to oat mixture in small bowl. (This will be for the filling.)

    Add butter, granulated sugar and vanilla to oat mixture in large bowl. Beat, using an electric mixer on low, until mixture is crumbly. Reserve 1 cup crumble in a small bowl. (This will be for the topping.) Press remaining crumble evenly onto bottom of prepared pan.

    Bake 15 minutes.

    Stir sweet potato purée, eggs, brown sugar, bourbon and reserved 2/3 cup oat mixture in same large bowl until combined. Spread filling evenly over warm crust. Sprinkle reserved crumble and pecans evenly over filling.

    Bake until topping is light golden brown, about 30 to 35 minutes. Transfer to a rack to cool completely. Cut into bars. Serve at room temperature. Store leftovers, tightly covered, in refrigerator.
