Split Pea Soup
In a large sauce pan, heat oil over medium heat and add onion, carrots and potato. Reduce to medium-low and cook for 10 minutes, stirring frequently to avoid burning.
Add split peas, broth, bay leaf, dill, garlic and pepper.
Bring to a boil and then reduce heat to simmer.
Cover and simmer for 1.5 hours until peas are tender and soup has thickened. Remove bay leaf.
If you have an immersion blender, blend the soup until smooth.
