A French-Canadian favourite, this split pea soup is delicious anytime and easy to prepare. A slow simmer softens the peas and melds all the herbs and seasoning together for perfect flavour.

Heat a large saucepan over medium. Add oil, then onion, carrot and potato. Cook, stirring often, for 10 minutes.

Add split peas, broth, bay leaf, dill, garlic powder and black pepper. Bring to a boil over high, then reduce heat to low.

Simmer, covered, until split peas are tender and soup has thickened, about 1 ½ hours. Remove bay leaf.

If desired, use an immersion blender to blend the soup until smooth.
