Summer Salad with Grilled Steak Recipe
Preheat barbecue to medium-high.
Combine strawberries, vinegar, honey and 1/4 tsp each salt and black pepper in a food processor. Pulse until finely chopped. While whirling, add 1/4 cup oil until mixture is smooth. Set aside.
Brush remaining 1 tbsp oil over steaks. Sprinkle with remaining 1/2 tsp each salt and black pepper.
Oil grill. Barbecue steaks until an instant-read thermometer inserted into thickest part of steak reads 145°F, for medium-rare, about 3 to 5 minutes per side.
Arrange lettuce and spring mix on a large platter. Arrange berries, cheese, corn, sliced steak and tomatoes overtop. Drizzle with strawberry dressing.
