Steak with Chimichurri Sauce Recipe
Preheat barbecue to medium.
Combine parsley, green onions and garlic in a food processor. Whirl until finely chopped, about 30 seconds, scraping sides as needed. Add mayonnaise, vinegar, red pepper flakes, and a pinch each of salt and pepper. Whirl until blended. Set aside.
Oil grill. Season steaks all over with salt and pepper. Barbecue steaks, with lid open, until an instant-read thermometer inserted into thickest part of steaks reads 145°F, for medium-rare, about 6 to 8 minutes, turning once. Remove to a cutting board and cover with foil. Let steaks rest for 5 minutes.
Slice steaks thinly against the grain, then serve with sauce.
