Classic Pork BBQ Back Ribs
Pull off thin membrane from the underside of the rack of ribs. Dry each rack with paper towels. Rub spice rub all over ribs.
Preheat one side of barbecue to 250°F for indirect grilling (one side will be lit, and the other will not.)
Place ribs, bone-side-down, on barbecue grate over unlit side. Grill, with lid closed, until an instant-read thermometer inserted into ribs reads 160°F, about 2 1/2 to 3 hours. During the last 30 minutes of grilling, baste ribs with barbecue sauce every 10 minutes.
Transfer to cutting board. Cut into riblets before serving.
