Classic Roasted Turkey Recipe
Position rack in bottom third of oven, then preheat to 425°F. Place a rack in a large roasting pan.
Remove turkey from packaging. Remove neck and giblets. Pat turkey dry with paper towels.
Combine mayonnaise, bouillon powder, shallot and rosemary in a medium bowl. Starting at neck opening, gently loosen skin on turkey all the way into breast and evenly spread half of mayo mixture under skin. Tie ends of drumsticks together with butcher's twine to secure.
Arrange turkey, breast-side-up, on prepared rack. Rub remaining mayo mixture over turkey skin. Tent with a large piece of heavy-duty foil.
Roast for 1 hour. Reduce oven temperature to 350°F. Roast for 1 hour and 30 minutes. Remove and set aside foil. Continue roasting turkey, basting occasionally with pan juices, until an instant-read thermometer inserted into thickest part of thigh reads 180°F and skin is browned and crispy, about 30 more minutes. Let stand, covered loosely with foil, 20 minutes. Carve turkey and serve.
