    Combine rice and water in a medium saucepan set over high. Bring to a boil. Boil for 1 minute, then reduce heat to low. Cook, covered, for 15 minutes. Remove from heat. Let stand, covered, for 15 minutes.

    Meanwhile, combine vinegar, sugar, salt and black pepper in a small microwave-safe bowl. Microwave for 45 seconds on 100% power. Set aside to cool.

    Stir half of cooled vinegar mixture into cooked rice until well coated. Then stir in remaining vinegar.

    Heat a large frying pan over medium. Add oil. With wet hands, form rice into patties about 2-in wide and 1/2-in thick. Add to pan, cooking in batches if necessary. Cook until lightly golden, about 2 to 3 minutes per side.

    Arrange shiso leaves on a platter. Transfer rice patties onto leaves. Top with smoked salmon and onion. Sprinkle with sesame seeds. Serve with soya sauce.
