
Sweet Potato Fries with BBQ Mayonnaise

Bake sweet potatoes in the oven (after tossing in mayonnaise to get them extra crispy) while you mix your dip together. Rich in vitamins and fibre, these sweet potato fries are a delicious side that go well burgers, wings or on their own as a snack.

Position racks in lower and upper thirds of oven, then preheat to 425°F. Line 2 baking sheets with foil, then spray with non-stick cooking spray.

Combine sweet potatoes with 1/2 cup mayonnaise in a large bowl. Toss to coat. Arrange potatoes on prepared sheets.

Bake 20 minutes. Flip potatoes and rotate sheets. Continue baking until potatoes are golden and crisp, about 15 minutes.

Stir remaining 1/2 cup mayonnaise with barbecue sauce in small bowl. Serve with fries.
