Sweet Quinoa Muffins
Cook quinoa following package directions, 10 min. Drain and let cool.
Preheat oven to 375F, then spray a 12-cup muffin pan. Whisk flours, baking soda, baking powder, cinnamon and salt in a medium bowl.
Whisk bananas, eggs, honey, buttermilk and vanilla in a large bowl. Stir in dates, then stir in flour mixture and cooked quinoa.
Spoon into prepared muffin cups. Sprinkle with coarse sugar. Bake until toothpick inserted into centre of a muffin comes out clean, 15 to 18 min. Let cool in pan for 10 min. Remove from pan and let cool completely.
