Cinnamon-Date Quinoa Muffins Recipe
Cook quinoa in a medium saucepan following package directions, 10 minutes. Drain and let cool.
Position rack in centre of oven, then preheat to 375°F. Spray a 12-cup muffin pan with non-stick cooking spray.
Whisk flours, baking soda, baking powder, cinnamon and salt in a medium bowl. Set aside.
Mash bananas in a large bowl. Then stir in eggs, buttermilk, honey and vanilla. Stir in dates. Stir in flour mixture and cooked quinoa until just combined.
Divide batter between muffin cups. Sprinkle with coarse sugar. Bake until a skewer inserted into centre of muffins comes out clean, 15 to 18 minutes. Let muffins cool in pan for 10 minutes. Then transfer muffins to a rack to cool completely.
