Szechuan Beef Noodles Recipe

    Position rack in top third of oven, then preheat broiler.

    Slice green onion tops thinly. Cut white sections of green onions into 2-in pieces.

    Cook pasta in a large pot following package directions. Drain and toss with the green onion tops, sesame oil and red pepper flakes. Set aside.

    Line a large rimmed baking sheet with foil. Combine white sections of green onions, snap peas, peppers, ginger and garlic on prepared sheet. Add hoisin and toss to coat. Set aside.

    Rub steaks all over with five-spice powder. Heat a large frying pan over medium-high. Add oil, then steak. Cook, turning halfway, until an instant-read thermometer inserted into thickest part of steak reads 145°F, for medium-rare, about 5 to 10 minutes. Cover with foil and let rest for 10 minutes.

    Meanwhile, broil vegetables until tender and lightly charred, about 5 to 8 minutes, stirring halfway. Drizzle with vinegar.

    To serve, slice steak thinly. Arrange veggies and steak over noodles. Sprinkle with peanuts.
