Teriyaki Beef Wraps

Quick to make (and even quicker to eat), these hand-held wraps are a fun and fabulous weeknight dinner. Ready in just 35 minutes. Tip: This recipe comes together like a stir-fry: hot and fast. Have your vegetables and meat prepped before you fire up the frying pan to stay organized.

    Position rack in centre of oven, then preheat to broil. Wrap tortillas in foil. Place in hot oven, then turn oven off. (This will keep tortillas warm.)

    Heat a large non-stick frying pan over medium-high. Add oil, the mushrooms, onion and bell peppers. Cook, stirring occasionally, until bell peppers start to soften, about 5 minutes. Transfer to a plate. Cover with foil to keep warm.

    Add half of beef to pan. Cook, stirring occasionally, until browned, about 3 to 5 minutes. Transfer to a plate. Repeat with remaining beef.

    Return last batch of beef to pan. Stir in teriyaki sauce until warmed through, about 1 to 2 minutes.

    Layer each tortilla with beef and vegetables. Roll up to serve.
