Tex Mex Grilled Cheese Sandwich

A good grilled cheese always hits the spot! This tex-mex sandwich brings a lot of great ingredients together: avocado, cilantro, mixed cheese and salsa. The only question left is, should you make one sandwich — or two? Tip: Butter both sides of your bread for optimal grilling.

    Spread butter over both sides of bread. Evenly layer the slices of avocado on one slice of bread. Sprinkle with cheese, then cayenne and cilantro. Sandwich with remaining sourdough slice.

    Heat a large non-stick frying pan over medium. Add sandwich. Cook until bottom is golden and crisp, about 2 to 3 minutes. Flip, then cook until bottom is golden and crisp, about 1 to 2 more minutes. Let sandwich stand 1 minute before cutting in half. Serve with salsa on the side for dipping.
