Tex-Mex Tortilla Lasagna
Position rack in centre of oven, then preheat to 350°F. Lightly spray a 9-in. pie plate with non-stick cooking spray. Place on a baking sheet.
Heat a large non-stick frying pan over medium-high. Add oil, then pork. Cook, stirring to break up meat, until no pink remains, about 2 minutes. Add mushrooms, onion, garlic, chili powder, cumin and oregano. Cook, stirring occasionally, until onion is soft, 3 to 4 minutes.
Stir in tomato sauce and brown sugar. Gently boil until sauce reduces slightly, 5 minutes. Stir in beans and 2 cups spinach.
Assemble lasagna by placing one tortilla on bottom of pie plate. Spread one-third of pork mixture in an even layer over tortilla. Scatter 2/3 cup each spinach and cheese overtop. Repeat layering twice more, ending with cheese layer.
Bake, uncovered, until cheese is melted, about 20 minutes. Let stand for 5 minutes before cutting into wedges.
