Thai Basil Chicken With Tomatoes
Tip: Adding basil at the very end preserves the flavour in the Thai chicken stir fry—too much heat will break down the oils (all the flavour) in the leaves.
Heat a wok or large non-stick frying pan over medium-high. Add oil, then chicken. Cook, stirring often, until no longer pink, about 3 to 4 minutes. Transfer chicken to a plate.
Add mushrooms to wok. Cook, stirring occasionally, until softened, about 3 minutes. Add garlic, anchovy paste, paprika, and red pepper flakes. Cook, stirring constantly, 30 seconds. Add tomatoes and soy sauce. Cook, stirring often, until tomatoes begin to soften, about 2 minutes.
Stir in basil and chicken. Stir until chicken is heated through, about 1 minute. Serve, if desired, over hot cooked rice.
