Thai Chicken Recipe with Jasmine Rice
Heat a large frying pan over medium-high. Add oil, then chicken. Cook, stirring often, until chicken is no longer pink, 3 to 4 minutes. Transfer chicken to a plate.
Pour soup into pan. Gently boil until soup is reduced by half, about 5 to 7 minutes. Return chicken back to pan and continue cooking for 5 to 7 more minutes.
Meanwhile, cook rice and frozen vegetables according to package directions.
Serve chicken and sauce over rice with vegetables on the side.
