Beef Sandwiches With Mango Salsa

If you don't know what to do with leftover roast beef, this is it. The sandwich salsa is tangy and spicy (thanks to mango, jalapeño and lime). The beef, saucy. The buns, cheesy. It all comes together in a half hour in a spectacular set of beef sandwiches.

    Position rack in top third of oven, then preheat broiler.

    Combine mango, cucumber, red onion, cilantro, lime juice, jalapeno and salt in a large bowl.

    Combine beef and barbecue sauce in a frying pan, then place over medium. Heat until warmed through, about 8 minutes.

    Slice buns in half. Place buns, cut side up, on a baking sheet. Divide beef mixture among top buns. Place a slice of cheese onto each bottom bun.

    Broil until cheese is melted and buns begin to brown, about 2 to 3 minutes.

    Top beef mixture with a generous scoop of mango salsa, then close sandwiches.
