Tikka Masala Vegetable Bake
Position rack in centre of oven, then preheat to 400°F.
Combine cauliflower, mushrooms, baby corn, bell pepper and asparagus in a 9x13-in baking dish.
Pour tikka masala cooking sauce over vegetables. Stir well to coat.
Sprinkle breadcrumbs over vegetables.
Bake until vegetables are tender, mixture is bubbling and breadcrumbs are golden brown, 40 to 45 minutes. Cover with foil if breadcrumbs brown too quickly. Serve garnished with cilantro.
