Tomato & Bacon Macaroni and Cheese

Classic macaroni & cheese is brought to a whole new level with this easy upgrade. Bacon, juicy tomato and breadcrumbs make it so irresistible that you'll be eating it straight from the pot. Tip: Finish in the oven to add extra crunch to your breadcrumb topping.

    Position rack in centre of oven, then preheat to 375°F. Spray a 2-L baking dish with non-stick cooking spray.

    Cook macaroni in a medium saucepan following package directions.

    Meanwhile, heat a large saucepan over medium. Add butter and stir until melted. Sprinkle over flour. Cook, stirring constantly, for 2 minutes. Gradually whisk in milk. Bring to a gentle boil, whisking constantly. Simmer 2 minutes. Remove from heat and stir in cheese until melted.

    Drain pasta and add to cheese sauce. Stir to combine. Stir in tomatoes and bacon. Transfer mixture into prepared dish. Sprinkle panko overtop.

    Bake until bubbling and golden, about 20 to 25 minutes. Let stand 5 minutes before serving.
