Egg & Cheese Brunch Bake Recipe

    Position rack in centre of oven, then preheat to 375°F. Spray a 9x13-in baking dish with non-stick cooking spray.

    Combine eggs and cream cheese in a blender. Blend until smooth.

    Arrange 6 tortillas on bottom of prepared dish, overlapping as necessary to evenly cover bottom of dish. Pour egg mixture overtop. Sprinkle with half each of onion and cheese. Top with remaining tortillas. Spread salsa overtop. Cover dish with foil.

    Bake for 25 minutes. Remove foil. Sprinkle with remaining cheese. Bake, uncovered, until centre is set, about 15 minutes. Let stand 10 minutes before serving.

    Serve topped with sour cream and remaining green onions.
