    Position rack in centre of oven, then preheat to 350°F.

    Combine oats, almonds and crystallized ginger in a large bowl. Stir together honey, butter, ground ginger and salt in a small bowl. Drizzle over oat mixture and toss well to coat. Spread evenly on a large baking sheet.

    Bake until toasted and slightly golden, about 20 minutes, stirring every 5 minutes. Remove from oven and immediately stir in dried fruit. Transfer pan to a rack and cool completely.

    Serve granola with milk, stirred into yogurt, or sprinkled over fresh fruit, ice cream or frozen yogurt. Store in an airtight container.
