Turkey Rice Soup Recipe

Made with onions, carrots, celery, seven-grain rice medley and chicken broth, this hearty turkey soup is an excellent way to use up turkey leftovers.

Tip: This can also be an Instant Pot turkey soup recipe! The shortcut below cuts the total cook time, turning this into a speedy weeknight meal option.

    Heat a pot over medium-high. Add oil, then onion, carrots and celery. Cook, stirring occasionally, until vegetables are softened, about 3 to 4 minutes.

    Add turkey, rice blend, Italian seasoning and sage. Cook, stirring often, 1 minute.

    Add broth. Bring to a boil, then reduce heat to medium-low. Simmer until rice is tender, about 30 to 40 minutes. Ladle into bowls and serve with parsley, if desired.

    Make it in an Instant Pot in 45 minutes: Select sauté setting. When pot is hot, add oil, onion, carrots, celery, Italian seasoning and sage. Cook, stirring often, 3 minutes. Stir in turkey, rice and broth. Secure lid and cook on high pressure for 5 minutes. Allow pressure to release naturally, about 15 minutes. Ladle into bowls and serve with parsley, if desired.
