Turkey Pot Pie Recipe
Position rack in centre of oven, then preheat to 400°F.
Heat a large frying pan over medium-high. Add butter, then onion, celery, carrot, parsnips, sage and black pepper. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
Reduce heat to low. Add soup and broth. Cook, stirring constantly, until it comes to a simmer, about 5 minutes. Cover and cook, stirring occasionally, until vegetables are partially cooked, about 5 to 8 minutes.
Stir in turkey, corn and peas. Transfer mixture into a 8x8-in baking dish. Drape puff pastry sheet over dish and press gently to adhere. Cut small slits in the centre of pastry to allow steam to escape during baking.
Bake until filling is bubbling and pastry is golden brown, about 30 to 35 minutes.
