Beef And Lentil Burgers With Carrot Slaw
For the Garlic Lentil Puree: Combine lentils, garlic, mayonnaise and honey in a food processor or blender. Pulse several times to puree. Continue to puree and slowly pour in canola oil until mixture becomes nice and smooth, about 1 minute. Transfer to small bowl and set aside until ready to assemble burgers.
For the Mustard Carrot Slaw: Shave carrots, using a vegetable peeler, into thin, long strips. Once you reach the core of the carrot, slice as thinly as possible with a knife. Combine carrots, red onion, mustard, vinegar, salt and black pepper in a medium bowl. Stir to combine. Let marinate in fridge for at least 1 hour before serving.
To Assemble Burgers: Barbecue burgers following package directions. Smear garlic lentil puree on bottom and top halves of burger buns. Layer with cooked patties, cheese and carrot slaw.
