Beef And Lentil Burgers With Carrot Slaw

Beef And Lentil Burgers With Carrot Slaw

30-minute recipe Serves 4
These beef and lentil burgers are an awesome mix of flavours. The simple beef patty gets a saucy aioli-style upgrade with a garlic lentil puree, and a sharp, tangy finish from crunchy carrot and onion coleslaw. Tip: Let the slaw marinate for an hour to let the ingredients pickle together.

For the Garlic Lentil Puree: Combine lentils, garlic, mayonnaise and honey in a food processor or blender. Pulse several times to puree. Continue to puree and slowly pour in canola oil until mixture becomes nice and smooth, about 1 minute. Transfer to small bowl and set aside until ready to assemble burgers.

For the Mustard Carrot Slaw: Shave carrots, using a vegetable peeler, into thin, long strips. Once you reach the core of the carrot, slice as thinly as possible with a knife. Combine carrots, red onion, mustard, vinegar, salt and black pepper in a medium bowl. Stir to combine. Let marinate in fridge for at least 1 hour before serving.
