Ultra Creamy Mashed Potatoes
Cover potatoes with water in a pot set over high. Add salt. Bring to a boil, then reduce heat to medium-low. Gently boil until potatoes are fork-tender, about 15 minutes. Drain potatoes through a colander.
Add soup and cream to same pot set over medium. Cook, stirring constantly, until it comes to a simmer. Return potatoes to pot along with butter and black pepper. Mash until creamy. Garnish with chives.
Make it in an Instant Pot in 40 minutes: Add 1 cup water and salt to pot. Place metal trivet inside, then arrange potatoes on top of trivet. Secure lid and cook on high pressure for 10 minutes. Slowly and carefully do a quick release of the pressure valve. Remove potatoes and trivet. Drain liquid. Return potatoes to pot. Select sauté setting. Add soup, cream, butter and black pepper to potatoes. Cook until heated through. Turn power off. Mash until creamy. Garnish with chives.
