Vanilla Shortbread Recipe
Position rack in centre of oven, then preheat to 325°F. Line 2 baking sheets with parchment.
Stir flour, cornstarch and salt in a medium bowl. Set aside.
Beat butter, cream cheese and 2/3 cup icing sugar in a large bowl, using an electric mixer on medium, until combined. Beat in vanilla. Reduce speed to low. Gradually add flour mixture until just combined.
Roll dough into 1/2-in balls. Arrange 1/2 in apart on prepared sheets.
Bake until bottoms are golden brown, 25 to 28 minutes. Cool cookies on baking sheets for 1 minute. Then transfer cookies to a rack to cool completely.
Place remaining 1 2/3 cups icing sugar in a medium bowl. Add several cooled cookies at a time. Toss to evenly coat. Gently shake off excess sugar.
