Vegan, Gluten-Free Lofthouse Cookies

Lofthouse cookies are tender, cakey and so fun to decorate! These ones taste just as good as your bakery favourites, but are vegan and gluten free, so everyone can enjoy them! Decorated for the holidays, they’ll make both kids and parents smile.

    Position racks in the upper and lower thirds of oven, then preheat to 350ºF. Line 2 large baking sheets with parchment paper.

    Whisk to combine gluten-free flour, baking powder, baking soda and salt in a medium bowl.

    In a stand mixer fitted with a paddle attachment or a large bowl with a hand mixer, cream vegan buttery spread and sugar together until lightened in colour and fluffy, about 3 minutes. Scrape down sides of bowl and mix in lemon juice, vanilla extract and almond extract. On low speed, mix in oat milk—the mixture will look curdled, which is supposed to happen. Slowly incorporate the flour mixture, mixing until fully combined. The cookie dough will look and feel like thick cake batter, unlike regular cookie dough.

    Scoop dough onto parchment-lined baking sheets using a 3-tablespoon spring-loaded cookie scoop, spacing cookies 2 inches apart.

    Bake for 6 minutes. Rotate pans 180 degrees and then bake for another 6 to 9 minutes until the bottoms are a very light brown. Cool on baking sheets for 5 minutes and then transfer to a wire rack to cool completely. Repeat with remaining dough.

    Spoon frosting into small bowls and colour as desired. Set out sprinkles for decorating.

    Once cookies are cooled completely, spread 2 to 3 teaspoons of frosting on each cookie and decorate with sprinkles. Enjoy immediately or let frosting firm up for a few hours at room temperature. Cookies keep well airtight at room temperature for 2 days, in the refrigerator for 3 days, or can be frozen for up to 2 months (they taste so good straight from the freezer!).

    Time-Saving Tip: For a holiday cookie decorating party, prepare the cookie dough up to 3 days in advance and refrigerate in an airtight container. Bake and cool the day you will decorate them.
