Vietnamese Chicken & Rice Recipe
Combine vinegar, sugar and 1/2 tsp sambal oelek in a medium bowl. Add cucumber and radish slices. Toss to coat. Cover and refrigerate for 30 minutes.
Meanwhile, combine lime juice, water, remaining 1/2 tsp sambal oelek and 1 tbsp cilantro in a medium bowl. Add chicken. Toss to coat. Set aside.
Prepare side dish following package directions. Stir in remaining 1 tbsp cilantro when finished.
Divide rice amongst plates. Top with chicken and pickled vegetables. Garnish with more cilantro, if desired.
