Vietnamese Chicken & Rice Recipe

Sambal oelek, cilantro and lime juice add a tangy, spicy twist to this simple dish. Our Vietnamese chicken and rice recipe is so quick, it can be prepared in between meetings for lunch, or save you some time when you want a light dinner.

    Combine vinegar, sugar and 1/2 tsp sambal oelek in a medium bowl. Add cucumber and radish slices. Toss to coat. Cover and refrigerate for 30 minutes.

    Meanwhile, combine lime juice, water, remaining 1/2 tsp sambal oelek and 1 tbsp cilantro in a medium bowl. Add chicken. Toss to coat. Set aside.

    Prepare side dish following package directions. Stir in remaining 1 tbsp cilantro when finished.

    Divide rice amongst plates. Top with chicken and pickled vegetables. Garnish with more cilantro, if desired.
