Vietnamese Meatball Sandwich
Stir 1 tbsp stir-fry sauce with mayonnaise in a small bowl. Set aside.
Combine ground pork, garlic, green onions, basil, black pepper and 1 tbsp stir-fry sauce in a large bowl. Shape into 1-in round meatballs.
Heat a large non-stick frying pan over medium-high. Add oil, then meatballs. Cook, turning often, until cooked through and browned, about 10 to 12 minutes.
Add remaining stir-fry sauce to pan. Bring to a boil, then reduce heat to low. Simmer, stirring often, until an instant-read thermometer inserted into meatballs read 160°F, about 10 minutes.
Cut open baguette pieces and scoop out excess bread from inside bun. Spread mayonnaise mixture onto one side of bun.
Divide meatballs amongst buns, spooning any excess sauce from pan over meatballs. Top with carrots, cucumber and cilantro leaves.
