Warm and ooey-gooey, this brownie s'mores recipe is the perfect summer treat. They beat their campfire counterparts with one simple change: soft brownie cookies. (No offence to graham crackers, but you might never make s'mores with them again.)

    Position rack in top of oven, then preheat broiler on high. Line a baking sheet with foil.

    Unwrap brownie cookies and place flat-side up on prepared sheet. Top six cookies with three squares of chocolate each. Stick 2 marshmallow pieces, cut-side-down, on chocolate squares. (There will be 6 cookies with nothing on them.)

    Broil until marshmallows are browned and beginning to puff, about 30 to 50 seconds. Don't walk away from the oven–the marshmallows roast very quickly. Watch closely!

    Remove from oven and wait 30 to 40 seconds before handling. Top each roasted marshmallow with a warm brownie cookie. Serve immediately.
