Warm Tuna & Vegetable Salad Recipe
Heat a large nonstick frying pan over medium-high. Add margarine, then mushrooms, green beans, onion, salt and pepper. Cook, stirring occasionally, until vegetables are tender-crisp, about 6 minutes. Cover and let steam 3 minutes.
Divide salad greens onto 2 dinner plates. Top with warm vegetable mixture and juices, tuna, tomatoes and cucumbers. Drizzle with vinegar and garnish with Parmesan.
