    Position rack in centre of oven, then preheat to 375°F. Line a baking sheet with foil.

    Prepare rice following package directions.

    Meanwhile, slice each chicken breast through the centre so it opens like a book. Place a piece of ham and cheese in the centre of each breast, then fold chicken to enclose the filling. Season with salt and pepper. Place on prepared baking sheet.

    Brush the tops of the chicken breasts with mustard. Toss the breadcrumbs with the parsley and butter in a small bowl until evenly coated. Sprinkle the breadcrumb mixture over each chicken breast. Bake until an instant-read thermometer inserted into centre of breasts reads 165°F, about 25 minutes.

    Stir the pesto into the rice. Serve chicken breasts with rice.
