    Heat a large deep frying pan over medium-high. Add oil, then pork chops. Cook until chops are browned, about 4 minutes per side. Transfer chops to a plate.

    Add cabbage, apples and vinegar to pan. Cook, stirring occasionally, until apples are tender, about 8 minutes.

    Meanwhile, prepare soup mix in a medium bowl following package directions (but reducing water to 1 cup).

    Stir soup mixture into pan. Bring to a boil. Return chops and any juices to pan. Simmer until an instant-read thermometer inserted into thickest part of chops reads 160°F, about 5 minutes. Season with black pepper, if desired.
