In a large saucepan, heat the oil over medium. Add onions and garlic. Sauté 3-4 minutes or until starting to soften. Add tomato paste and Italian seasoning. Cook 1-2 minutes, stirring constantly. Gradually pour in the vegetable cocktail while stirring constantly. Bring to simmer, reduce heat to medium-low and continue simmering, uncovered, while preparing the meatballs. Combine all meatball ingredients thoroughly. Working with 1 ½ - 2 Tbsp (22 - 30 mL) at a time form the turkey mixture into roughly twenty balls, gently adding them to the pot as they are formed. The sauce should just barely be simmering. Simmer in sauce, loosely covered, for 20-25 minutes or until cooked through. Do not stir for the first 10 minutes as the meatballs may break apart; instead gently swirl the pot to move them around. While the meatballs are cooking, bring a large pot of water to boil. Cook spaghetti according to package directions. Drain well and set aside until meatballs are cooked. Serve meatballs and sauce over prepared pasta. Top with more Parmesan cheese, if desired.
