Your Fresh Market Couscous Roasted Vegetable Medley
Wash all produce well.
Preheat oven to 425°F (218°C).
Prepare and dice all vegetables into a similar size. Toss with 2 tbsp (30 mL) extra virgin olive oil. Arrange in single layer on a baking tray.
a) If using chicken, drizzle over it 2 tbsp (30 mL) extra virgin olive oil. Place on baking tray with vegetables and bake in the oven for 30 minutes. Turn vegetables and chicken halfway through baking time. b) If using plant-based protein tenders, first bake vegetables on baking tray for 15 minutes. Then turn vegetables, add protein to tray, and bake for another 15 minutes.
To a saucepan over high heat, add 7/8 cup (200 mL) water, 2 tbsp (30 mL) extra virgin olive oil, vegetable broth seasoning, and stir.
Once boiling, remove from heat, add couscous, stir, and cover. Let sit for 10 minutes, then fluff with a fork.
In a large bowl, combine roasted vegetables and couscous. Drizzle with additional olive oil to taste, squeeze lemon juice, and top with roasted protein.
Season with salt and pepper to taste, serve, and enjoy!
