
Your Fresh Market Sesame Stir-Fry with Rice

Wash all produce well.

If using tofu, drain it and gently squeeze dry with a paper towel or clean dish towel. Cut into 1/2" cubes and set aside.

Prepare and slice red bell pepper, green bell pepper, and red onion. Slice zucchini in half lengthwise, then crosswise into half-moon shapes. Discard rubber band from peas, trim the ends, and cut peas in half. Peel and julienne carrot. Set aside.

Rinse and drain rice. In a small saucepan, add rinsed rice and 1-1/3 cups (330 mL) water. Simmer on low heat, covered, for 15 minutes. Turn off heat and let rice cook for an additional 5 minutes, covered. Fluff with a fork and set aside.

In a large sauté pan or wok, set on high heat and add 2 tbsp (30 mL) vegetable oil.

Add beef strips or cubed tofu and stir-fry for 3 minutes.

Add onions and peppers to pan and cook for 2 to 3 minutes, then add remaining vegetables. Gently heat thoroughly, ensuring vegetables remain crunchy.

Add sesame stir-fry sauce and mix well.

Serve stir-fry on top of the rice and enjoy!
