Your Fresh Market Tacos
Wash all produce well.
Pico de Gallo: Dice the Roma tomato, 1/2 peeled red onion, and a 1/3 jalapeño into small pieces. Add to a bowl, squeeze in 1/2 the lime juice and mix with 1/3 of Pico de Gallo seasoning. Set aside.
For sour cream: Add remaining Pico de Gallo seasoning to 1 cup (250 mL) sour cream. Mix well and set aside.
In a large skillet over medium heat, add 2 tbsp (30 mL) vegetable oil and ground pork or plant-based protein. Sauté for 4 minutes or until brown. Stir occasionally to break up any large pieces.
Prepare and dice red and green bell peppers, remaining red onion, and jalapeño, and add to the skillet with taco seasoning. Mix well with protein and cook until peppers are tender.
Dice avocado and set aside. (Chef’s Tip: Make your own guacamole by mashing together avocado, lemon juice, and a pinch of salt to taste.)
Serve with warm tortillas.
To assemble tacos, place protein and veggie mix on tortilla. Top with Pico de Gallo, sour cream, and diced avocado or guacamole.
Squeeze fresh lime on top, serve, and enjoy!
