Your Fresh Market Teriyaki Quinoa Bowl
Wash all produce well.
Rinse and drain quinoa. Bring water to a boil, then reduce to medium-low heat. Add quinoa, cover with a lid, and cook for 15 minutes or until tender. Set aside.
Peel and dice red onion, carrots, sweet potato and red bell pepper to 1 cm in size. Set aside.
Trim and slice Brussels sprouts. Set aside.
Cut protein into chunks. Set aside.
In a large non-stick skillet over medium-high heat, add vegetable oil. Add protein and sauté for 5 to 6 minutes or until cooked thoroughly. Remove from pan and set aside.
In the same skillet, add vegetable oil and the prepared vegetables in the following order: a) Sauté sweet potato for 5 to 6 minutes. b) Add onion, carrots, and peppers and sauté for 3 to 4 minutes. c) Add Brussels sprouts and sauté for 2 minutes.
Add the quinoa and protein back to the skillet with the vegetables, then add the stir-fry sauce, mix well, and cook for 2 minutes. Serve and enjoy!
