Pear & Parmesan Stuffed Mushrooms

Position rack in centre of oven, then preheat to 400°F.

Remove and finely chop mushroom stems. Reserve mushroom caps.

Heat a large frying pan over medium-high. Add margarine, then mushroom stems, pear and shallot. Cook, stirring occasionally, until tender, about 5 minutes. Stir in cheese, parsley, salt and pepper.

Fill reserved mushroom caps with pear mixture, dividing evenly. Arrange caps on a baking sheet. Bake until mushrooms are tender, about 15 minutes. Garnish with more cheese, if desired.

Slow Cooker Vegetarian Lasagna

  • This filling vegetarian dish feels hearty and meaty like a holiday meal should, but it’s definitely meat-free.
  • Take 15 minutes in advance to put this together then let it slow cook until dinnertime, leaving the oven free for some of your other dishes.

Combine ricotta, spinach, 1 cup of the shredded cheese, and soup mix in medium bowl. Set aside.

Spread 1 cup tomato sauce in the bottom of a 6-L slow cooker. Layer in 4 lasagna noodles, breaking them to fit. Spread with 1/2 of the ricotta mixture, then 1 cup tomato sauce. Repeat these steps once.

Top with remaining 4 lasagna noodles and remaining sauce. Cover and cook on low until noodles are tender, 4 to 5 hours.

Sprinkle the cooked lasagna with remaining 1 cup of the cheese. Cover and cook 10 minutes until cheese melts. Let stand 10 minutes before serving.

Heat a pot over medium-high. Add margarine, then mushrooms. Cook, stirring occasionally, until tender, about 5 minutes. Stir in water and soup mix. Bring to a boil, then remove from heat.

Stir in cubed bread, parsley, sage and thyme. Transfer stuffing to a 9x13-in baking dish. Cover dish with foil.

Bake for 15 minutes. Remove foil, then bake until top is golden, about 10 more minutes.

Vegan, Gluten-Free Lofthouse Cookies

  • These gluten-free, vegan cookies also make for a great holiday present, so you may want to double the recipe and gift some to guests as they leave.

Position racks in the upper and lower thirds of oven, then preheat to 350ºF. Line 2 large baking sheets with parchment paper.

Whisk to combine gluten-free flour, baking powder, baking soda and salt in a medium bowl.

In a stand mixer fitted with a paddle attachment or a large bowl with a hand mixer, cream vegan buttery spread and sugar together until lightened in colour and fluffy, about 3 minutes. Scrape down sides of bowl and mix in lemon juice, vanilla extract and almond extract. On low speed, mix in oat milk—the mixture will look curdled, which is supposed to happen. Slowly incorporate the flour mixture, mixing until fully combined. The cookie dough will look and feel like thick cake batter, unlike regular cookie dough.

Scoop dough onto parchment-lined baking sheets using a 3-tablespoon spring-loaded cookie scoop, spacing cookies 2 inches apart.

Bake for 6 minutes. Rotate pans 180 degrees and then bake for another 6 to 9 minutes until the bottoms are a very light brown. Cool on baking sheets for 5 minutes and then transfer to a wire rack to cool completely. Repeat with remaining dough.

Spoon frosting into small bowls and colour as desired. Set out sprinkles for decorating.

Once cookies are cooled completely, spread 2 to 3 teaspoons of frosting on each cookie and decorate with sprinkles. Enjoy immediately or let frosting firm up for a few hours at room temperature. Cookies keep well airtight at room temperature for 2 days, in the refrigerator for 3 days, or can be frozen for up to 2 months (they taste so good straight from the freezer!).

Time-Saving Tip: For a holiday cookie decorating party, prepare the cookie dough up to 3 days in advance and refrigerate in an airtight container. Bake and cool the day you will decorate them.

Cheesy Broccoli & Cauliflower Casserole

  • Whip up this vegetarian casserole the day before, cover it and store it in the fridge until you’re ready to bake.

Combine bread crumbs, 2 tbsp Parmesan, 2 tbsp melted butter and 1/2 tsp Italian seasoning in a small bowl. Set aside. Cut up any large broccoli or cauliflower florets into bite-size pieces.

Heat a large frying pan over medium. Add remaining 2 tbsp melted butter, then onion. Cook, stirring occasionally, until softened, about 5 minutes. Stir in flour, garlic salt, black pepper and remaining 1 tsp Italian seasoning.

Add milk. Cook until thickened and bubbly. Add cream cheese and remaining 1/4 cup Parmesan. Cook, stirring, until cream cheese is melted. Add vegetables. Toss gently to coat. Spoon into a 2-L baking dish. Sprinkle crumb mixture evenly overtop.

Bake until heated through and top is lightly browned, about 40 minutes.
